Simple Soft Omelette

  • 2 large eggs
  • 1 tablespoon of milk
  • Salt and pepper to taste
  • 1 teaspoon of butter or oil
  • Optional: chopped herbs, grated cheese or diced vegetables for flavour and nutrition
  1. In a small bowl, crack two large eggs and whisk them together with a tablespoon of milk.
  2. Season the mixture with a pinch of salt and pepper to taste, and add any optional herbs, cheese or vegetables as desired.
  3. Heat a non-stick frying pan over medium heat and add a teaspoon of butter or oil.
  4. Once the butter has melted or the oil is hot, pour the egg mixture into the pan and let it cook for 30 seconds.
  5. Use a spatula to gently fold the omelette in half and continue cooking for another 30 seconds or until the eggs are cooked through.
  6. Slide the omelette onto a plate and serve immediately.

Simple Chocolate Chip Cookies

  • 1/2 cup (1 stick) of unsalted butter, at room temperature
  • 1/2 cup of granulated sugar
  • 1/2 cup of brown sugar
  • 1 egg
  • 1 teaspoon of vanilla extract
  • 1 and 1/4 cups of all-purpose flour
  • 1/2 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1 cup of semisweet chocolate chips
  1. Preheat your oven to 350°F (180°C).
  2. In a large mixing bowl, cream the butter, granulated sugar and brown sugar together until light and fluffy.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together the flour, baking soda and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips until evenly distributed throughout the dough.
  7. Using a cookie scoop or spoon, drop balls of dough onto a baking sheet lined with parchment paper or a silicone mat.
  8. Bake for 10-12 minutes or until the edges are lightly golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
